Research on inhibitors in cranberries

, : Research on inhibitors in cranberries. Acta Horticulturae (61): 255-272

Cranberry fruit homogenates had antimicrobial effects on cultures of Penicillium expansum and (less markedly) on Aspergillus flavus. The effect was not more marked in cvs containing more benzoic acid. When halved berries were inoculated the pattern of fungal growth showed that the inhibitory substance was concentrated in the skin.
