Respiratory rises and maturation in two fruits, the pear and the cherry, harvested at different stages and subsequently stored at a constant temperature, with or without ethylene

Respiratory behaviour and response to ethylene were studied in a non-climacteric fruit, cherry (cv. Bigarreau Napoleon) and a climacteric fruit, pear (cv. Passe Crassane) which needs a period of cold for normal maturation to occur. Young green cherry fruits showed a natural respiratory rise after 4 or 5 days' storage at 15 deg C but young pears did not. Brief treatments with 500 or 1000 p.p.m. ethylene resulted in a rise in respiration, particularly conspicuous with pears.
