Response of currently grown potato varieties to dehydration

Dry-matter content varied from 19.9% to 26.1% in 13 varieties grown in Romania. High starch content was found in early varieties such as Bintje and Resy, as well as late varieties such as Eba, Ora, Uran and Flisak Epoka, Resy, Jaerla and Bintje, listed in order of their rehydration capacity, were suitable for all kinds of processing. Eba, Ora and Uran were recommended for use in bread-making.
