Several socio-economic variables known to influence consumers in the purchase and consumption of beef were examined in a marketing study of forage finished and limited grain finished beef. 91 Angus and Angus X Hereford steers and heifers were evaluated by retail purchasers and by members of a 273 household (consumer) panel. Panel members evaluated the steaks and roasts on tenderness, flavour, juiciness, and overall acceptability.
