The process used at the Rezekne milk preserving factory for the manufacture of evaporated milk in an Alfa-Laval installation with a capacity of 60 000 standard cans/shift is described. The process involves heating (at 120-130 deg C) of the milk (negative in 70-75% alcohol test) with added stabilizers (Na2HPO4.12H20 or Na3C6H507.5H2O at 0.10%), concentration in a triple-effect evaporator to 25.5-26% TS, homogenization, and sterilization in cans at about 117 deg C for 16 min.
