The content of nitrate and protein in head lettuce (Lactuca sativa var. capitata, butterhead lettuce) grown under different conditions

Analyses of lettuces grown in the open and in greenhouses under different conditions (daylengths, temperatures, sowing dates, cvs and fertilization levels) showed marked and inconsistent differences in the nitrate and protein contents. No single factor was found to be responsible for these variations.
