The occurrence of aflatoxin-producing strains of Aspergillus flavus in the mould floras of ground spices

All of 20 different ground spices and 3 mixtures available in the United Kingdom and which were purchased from 2 retail suppliers were significantly contaminated by bacteria and cloves only were free of moulds but thermophilic actinomycetes were isolated from 6 spices only. In general, the mould floras were dominated by Aspergillus spp. A. glaucus and A. niger were the most common. A. flavus was present in 14 spices and 7 of 24 strains examined produced aflatoxins in vitro. Whole ginger and Jamaica, red and white peppers supported growth of A. flavus strains and production of aflatoxins.
