Utilization of heated soybean protein isolate as a dietary source of methionine for rats

Utilization of heated soybean protein isolate as a dietary source of methionine for rats

Journal of Nutrition 104(11): 1389-1395

The effect of loss of methionine in soya bean protein isolate during thermal processing was studied. Heated soya protein isolate with or without additional methionine was used as the sole source of dietary protein for young rats. Heating of a mixture of protein isolate and glucose caused an increased resistance to hydrolysis with pronase.
