The scientific work of the Institute's dairy departments is described on pp. 527-581, beginning with the general services department and the planning and automation department. Some of the cheese research projects organized by the Coordinated Cheese Research Centre are reviewed on pp. 533-536. Inter-departmental projects which feature in several of the departmental reports include the following: Comparative investigations on Emmental and Gruyere cheeses with or without post-fermentation.
