Barley endosperm cell walls: a review of cell wall polysaccharides and cell-wall-degrading enzymes

Current knowledge of the composition and structure of the endosperm cell wall of barley and of the enzymes that degrade the cell-wall structure during the germination process is reviewed. Results of early studies (from 1890 onwards) are considered. The nature of the non-starchy polysaccharides (NSP) detected in barley endosperm tissue is discussed and literature relating to the isolation and characterization of enzymes that degrade NSP is reviewed.
