Effect of aging on the composition of mitochondrial membranes from potato slices



Phytochemistry 19(2): 211-214



The phospholipid content of mitochondrial membranes from slices of potato tuber remained stable during aging. The phospholipid compositions of whole mitochondria and inner membranes did not vary during aging whereas the conc. of phosphatidylinositol and phosphatidylglycerol in outer membranes were slightly amplified. The saturation of outer membrane fatty acids was slightly increased during aging.
