Effect of daily liveweight gains on the carcass quality of young fattening bulls

In a trial, 161 young Simmental bulls were subjected to similar conditions of housing and feeding between 145 and 450 kg. The bulls were in 4 groups with daily gains ranging from 1250 to 1550 g in increments of 100 g; significant differences among groups existed for daily gain, age and weight at slaughter. After slaughter, the proportions of meat, fat and bone on the prime rib cuts and the chemical composition of the longissimus dorsi muscle were estimated.
