Effect of ultraviolet irradiation of milk on formation of vitamin D and butter quality

Portions of a sample of raw milk were either (i) not treated, or (ii) irradiated for 26 s with a LE-30-1 UV lamp at 30 W and 220 V and a 285-380 nm radiation range, or (iii) irradiated for 24 s with a DB-30-1 lamp of similar characteristics but a 240-380 nm radiation range. Apart from an increase in vitamin D content, which was most marked in (iii) (values not stated), irradiation had no effect on milk composition.
