Milk heated to 40 deg C was exposed to vacuum at 94-97 kPa for 1 min, during which temp. was reduced to 34-36 deg C, rennet and CaCl2 were then added in quantities required to effect coagulation in 2-3 min. Individual results of 45 replicates comparing coagulation of treated with that of control milk are tabulated. Coagulation rate was increased in treated milk by 7.5% (P < 0.01).
