Evaluation of a mechanized line for the production of AKAWI cheese

Prumysl Potravin 30(10): 567-568

Details are given of the manufacture of AKAWI cheese and of a new mechanized line installed at the Radim cheese plant; Czechoslovakia. The cheese is made from pasteurized standardized milk (3.025% fat) by incubation with a cream starter, followed by renneting with the addition of CaCl2, moulding of the curd, pressing, brining, and pickling in 18-kg tins at <10 deg C.
