Evaluation of quality and grading of dried milks

216 dried milk samples comprising 124 spray-dried, 54 roller-dried and 38 infant milk powders were collected, reconstituted and stored. Quality was assessed in organoleptic and microscopic tests. The total spray-dried and infant milk powder samples (numbers given in brackets) were graded as excellent (10 and 15), good (12 and 19), fair (80 and 4) and poor (22 and 0).
