Denaturation of isolated beta -lactoglobulin ( beta -Lg) increased from 7.8% on heating at 65 deg C for 10 min to 76.9% at 100 deg C for 10 min; similar values were obtained for cow beta -Lg. Rate of aggregation of denatured protein increased sharply between 75 and 80 deg C and was complete at 85 deg C.
