A comparison was made of the flavour, nutritive value and some physico-chemical properties of pasteurized, in-bottle sterilized and indirectly- and directly-heated UHT milks. The flavour of UHT milk, particularly that of indirectly-heated milk, was significantly different from that of pasteurized milk; and that of directly-heated UHT milk was significantly different from in-bottle sterilized milk.
