Relationship of harvest sucrose content to processing maturity and storage life of potatoes

Relationship of harvest sucrose content to processing maturity and storage life of potatoes

American Potato Journal 55(6): 333-344

DOI: 10.1007/bf02852074

The relation between sucrose rating (SR) at harvest and the relative rate of reducing sugar accumulation in intermediate temp. storage (11.7%) which affects chipping quality, was studied in 65 potato clones. Samples with harvest SR >2.8 mg sucrose/g tuber were only suitable for short-term storage (0.5-5.3 months). Those with SR less than or equal to 2.8 had longer storage potential (7-10 months).
