Relationships of aroma compounds to canned fruit flavor among several pear cultivars

In a study including 27 varieties in 1972-1974, taste was correlated with aroma as assessed in canned fruit by a panel. Bartlett, (= Williams' Bon Chretien), its bud mutants and HW602 all had high scores and a high decadienoate ester content, with eight to nine esters present.
