Release of soluble and amino nitrogen in individual casein fractions by Lactobacillus mutants

2 gamma -radiation-induced mutants of Lactobacillus bulgaricus and L. casei, selected on the basis of increased proteolytic activity, were used to study the degradation of whole casein and fractions of casein at pH 5.0, 6.0 and 7.0. Soluble and amino N were determined in the casein substrates degraded with cell suspensions of lactobacilli. Max. liberation of both forms of N occurred at pH 7.0.
