Abstract
For 33 Simmental, 47 Charolais, 11 Chiana, 15 Romagna, 27 Piedmont and 11 Marche crossbred males resp., preslaughter weight at 15 mth of age averaged 541, 543, 503, 543, 528 and 526 kg, dressing percentage 61.0, 61.7, 62.9, 61.8, 64.8 and 61.5, percentage of grade-1 carcasses 33, 51, 73, 47, 67 and 46, internal fat 5.14, 4.81, 3.69, 4.53, 4.58 and 4.46%, and percentage of bone in the right half-carcass 16.67, 16.26, 18.00, 17.07, 15.19 and 17.20. The differences among groups in meat colour, muscle fibre thickness and cooling loss were small.
