Studies on meat quality and techniques for its estimation in Kagoshima Berkshires. 2. A study on muscle fibre diameter, muscle bundle diameter and the number of fibres in longissimus dorsi and biceps femoris muscle bundles

Samples of tissue from both muscles were obtained from 11 Kagoshima Berkshire (KB), 12 American Berkshire (AB) and 12 Hampshire barrows and gilts. Fibre diameter in both muscles was largest in Hampshires and smallest in KBs, and was larger in gilts than in barrows in all 3 breed groups. The diameter of muscle fibres and bundles and the number of fibres per bundle were not correlated with slaughter weight.
