Studies on the digestibility of protein from several legume species

Studies on the digestibility of protein from several legume species

Archivos Latinoamericanos de Nutricion 28(2): 215-231

In feeding trials with young dogs, using cooked beans, a comparison of a black, white and red-seeded variety of Phaseolus vulgaris indicated that the white-seeded variety was superior in quality to the other two. Total protein digestibility was lower than that of casein and increased with intake, except in the case of red-seeded beans.
