Women have been recognized for ages as cookers and servers of food but have been overlooked in their roles of producing, processing and marketing, even though women are responsible for 40% to 80% of food production in the Third World. In January, 1978, 215 people registered for a Conference on Women and Food at the University of Arizona, 47 of whom were women from the Third World.
