18 months storage study of prepared frozen foods containing protein concentrates

Samples of macaroni in milk-cheese sauce, produced by a conventional process and packed in 3.5 lb lots in Al trays were stored at -10, -20 and -30 deg C without or with temp. fluctuations, with organoleptic, nutritional and microbiological tests being carried out at intervals for up to 18 months. The specimens stored at fluctuating -10 deg C ( plus or minus 5 deg C) fell to poor quality level in 3 months, and became unacceptable in 6 months.
