Application of ion-exchange treatment to increase heat stability of milk used for production of evaporated milk

In laboratory experiments, samples of raw milk of 20-23 deg T titratable acidity were stored at 10 deg C for less than or equal to 12 h and passed through an ion-exchange installation (described and diagrammatically illustrated) incorporating 2 cylindrical filters filled with TsM-A2 ion-exchange cellulose synthesized in the Moscow Textile Institute. The treatment resulted in the replacement of lactic acid ions by hydroxyl ions from the cellulose.
