Changes in fatty acid composition of serum lipid fractions on diets rich in polyunsaturated fatty acids

The fatty acid profile of serum triglycerides, cholesteryl esters and phospholipids of 7 men 20 to 30 years old, who had normal blood lipids and were not overweight or diabetic, was examined at regular intervals before and during 1 week while the subjects were on their usual diet without oils or margarines rich in polyunsaturated fatty acids and during 19 days on a diet which supplied daily 56 g polyunsaturated, 18.4 g monounsaturated and 44.5 g saturated fat, with a polyunsaturated:saturated fatty acid ratio of 1.25:1. When the subjects changed to the diet high in polyunsaturated fat there was an increase of linoleic acid and decrease of oleic acid in all the lipid fractions studied; those changes were best illustrated by using the C18:2 to C18:1 ratio as a kinetic index. Changes in triglycerides occurred more rapidly than those in phospholipids. Changes in other fatty acids were less pronounced; palmitic acid decreased in all the lipid fractions, palmitoleic acid did not decrease significantly except in cholesteryl ester and stearic acid did not change significantly.
