During ripening of strawberry fruits, as the colour changed from green (unripe) to red (fully ripe), the chlorophyll a and chlorophyll b contents changed from 5.0 and 1.8 mu g/100 g fresh weight, respectively, to 0.36 and 0.2 mu g/100 g, respectively. Total carotenoids contents fell from 190 mu g/100 g to 40.0 mu g/100 g. Eleven carotenoids were present.
