Immobilized yeasts (Saccharomyces cerevisiae or Kluyveromyces fragilis), entrapped in calcium alginate gel to form the biocatalyst beads, were used to ferment a number of different substrates (including whey) in a continuous process in relatively small, space efficient reactors at various residence times.
