The influence of 40 chemical inhibitors on aflatoxin production by Aspergillus flavus was investigated in relation to substrate and incubation conditions. The efficiency of a chemical inhibitor depended on the str. growing on the food as well as incubation characteristics. Three substances showed strong inhibitory activity on fungal growth: sorbic acid, potassium sorbate and sodium metabisulphite.
