After various laboratory-scale tests in which ultrafiltration was carried out in an apparatus with 6 m2 membrane area of mean pore diam. of 56 plus or minus 6 nm, at 8-10 deg C and 0.4-0.6 MPa pressure, the following procedure was found best for production of the buttermilk product.
