How can unripe apples be recognized?

On 4 dates during March-June 1980 samples of imported Granny Smith apples were tested in an attempt to find criteria to detect unripeness. The refraction index, the depth of the calyx cavity, acidity, ethylene concentration in the core and the size of the fruit were all unsatisfactory criteria. The method recommended is a combination of the starch value, the ground colour and the penetrometer value.
