A brief illustrated description is given of the manufacture of Tete de Moine cheese at the Fuet plant, comprising coagulation in a mechanical vat of 2500 l vol., treatment of the coagulum, and its transfer by means of a vacuum/curd pump direct to a filling unit comprising 2 parallel vertical cylinders about 3 m high and each provided with 16 perforated tubes.
