Abstract
For 270 Polish Large White and 484 Polish White Lop-eared pigs fattened at a progeny-testing station, daily gain averaged 640 and 632 g resp. (P<0.05), consumption of protein/kg gain 442 and 449 g (P<0.05), weight of lean from the primal cuts 17.0 and 16.8 kg (P<0.01), weight of lean from the ham 4.7 and 4.6 kg, eye-muscle area 33.9 and 34.4 cm2, backfat thickness 2.32 and 2.48 (P<0.01), meat colour score 2.98 and 2.56 (P<0.01), water content of meat 75.0 and 74.7% (P<0.01), water-holding capacity 74.2 and 71.4% (P<0.01), pH immediately after slaughter 6.39 and 6.21 (P<0.01), and pH after 48 h 5.55 and 5.52 (P<0.05).
