Method for producing a food product with a good shelf life

The product, preferably cheese spread, contains 20-40% skim milk, 0-45% buttermilk and 30-80% water, 2-6% of a salt mixture containing monosodium phosphate/sodium phosphate with 70% P2O5, and a cross-linked polyphosphate with a pH of 2.9 in a ratio 3:4:2.
