Milk and milk products. Chemical and physical testing. Determination of dry matter and moisture content of milk and milk products

German Democratic Re ic Standard (TGL 29273/35): 4

DM and moisture are determined by drying at 102 plus or minus 2 deg C to constant wt. The max. acceptable differences in DM content values between results of duplicate determination and between results in 2 laboratories, resp., are 0.2 and 0.4% for milk, liquid milk products, cheese, acid-curd quarg and crude casein, and 0.1 and 0.2% for condensed and evaporated milk. A special procedure and formula are given for determining moisture in dried milk products.
