Abstract
Ripe fruits of the cherry cv. Bigarreau Napoleon yielded galacturonic acid, rhamnose, fucose, ribose, arabinose, xylose, 2-desoxyglucose, mannose, galactose and glucose. The total pectin content was 0.8%. Each of the fractions extracted successively by water, oxalate, hot dilute HCl and cold dilute NaOH contained mainly galacturonic acid and arabinose; galactose and rhamnose were also present in small amounts.
