Research on suitable storage conditions for oil olives, and microorganisms causing spoilage

Olive fruits, Memecik, were stored as follows out-of-doors or indoors: in heaps on the ground, on wooden platforms, in jute sacks or in wooden or plastic boxes. Fruits were also stored under the following liquids: tap water, 5, 10, 15 and 20% brine, 1% propionic acid, 1% potassium sorbate, 50% ethanol, 1% propionic acid + 5% NaCl, or 1% potassium sorbate + 5% NaCl. Storage in the open and indoors led to a rapid increase in the fatty acid content of the oil over three months.
