Structure of the cheese industry in Switzerland

Switzerland has some 1500 cheese factories, producing mainly Emmental, Gruyere, Sbrinz, Tilsit and Appenzell. 1 377 400 t milk was made into cheese in 1978/79, 40.8% more than in 1968/69. Over 80% of cheese factories belong to dairy cooperatives. 90% of the whey produced is fed liquid to pigs either in the factory's own piggery or on the farms of the milk suppliers. Many cheese factories have been built or modernized in recent years, with federal subsidies.
