Studies on the properties of the major Egyptian honey types and on honey ripening

Agricultural Research Review 55(1): 125-129

Physical properties and chemical constitution of citrus honey, clover honey and cotton honey were examined. A honey from Dakhla oasis was also analysed. Results are tabulated and discussed. Citrus honey had the lowest specific gravity, ash content and total soluble solids; "Oasis" honey had the highest values for these properties and also for pH, reducing sugars and protein content.
