The cheese factory, extensively modernized in 1981/82, receives about 1.8 million kg milk/yr from 25 suppliers. It employs a mechanical Hoegger cheese tank of 6500 l capacity equipped with a special stirring assembly with electronic speed control. The curd/whey mixture is pumped from the tank by a high capacity curd pump via a distributor into fully automated presses where the curd is pressed under whey according to a programme selected by the cheesemaker.
