Food intakes of 17 anorexia nervosa patients were assessed by diet histories taken at onset of illness and again when patients were most severely emaciated. Patients also completed a nutrition knowledge questionnaire. Results indicated that subjects' diets were significantly lower in energy and major nutrients than were diets of female controls. Patients exhibited higher protein intakes, lower fat intakes, and normal carbohydrate intakes when compared to controls, apparently rejecting energy-dense foods rather than high carbohydrate foods. Nutrient intakes were lower in the severe stage than in the initial phase of the disorder. Intakes of calcium, retinol, and ascorbic acid were below RDAs, but thiamin, riboflavin, and niacin were not. Most, but not all, patients scored higher in nutrition knowledge than did controls, giving more correct responses to items concerning caloric content of foods, cooking methods, dieting, and roughage. However, patients performed poorly on questions pertaining to public health. (nm)
