The effect of season, individuality and phase of milking on coagulation time of buffaloes and cows milk

Rennet coagulation time (RCT) of milk samples from 10 cows ranged from 53.83 s in summer to 68.83 s in winter and that of 12 cows ranged from 68.5 s in summer to 88.17 s in autumn; changes in RCT appeared to be related to changes in milk components. RCT of milk from individual animals ranged from 41 to 83 s for buffaloes and from 55 to 102 s for cows, these ranges being greater than those of corresponding bulk milk samples.
