Variations in serum cholesterol after single massive absorption of different dietary fats

Serum cholesterol was estimated while fasting and for up to 4 h after ingestion of olive oil, rapeseed oil or medium-chain triglycerides (MCT), all as gelatinized micropellets, or fresh cream, each at 50 g, by groups of 20 subjects, also in 32 fasting controls. Compared with initial fasting values, olive oil and MCT gave an early rise in cholesterol of about 4%, the increase at 1 h being significant only for olive oil.
