A graphical analytical method of calculating freeze-drying of Cottage cheese

The authors proposed a graphical analytic method for calculating freeze-drying of Cottage cheese, using the W - i diagram (proportion of water in Cottage cheese enthalpy). The diagram contains curves of constant proportions of frozen-out water, isotherms and isobars. An example of calculating freeze-drying using the diagram is given.
