A heat-resistant proteolytic enzyme from Pseudomonas fluorescens

Milchwissenschaft 37(5): 270-272

Pseudomonas fluorescens was grown at 25 or 4 deg C in brain-heart-infusion broth for up to 250 h and proteinase activity present in the culture medium was extracted by ammonium sulphate fractionation. The crude proteinase was separated into 5 fractions by chromatography on DEAE-sephacel.
