A mechanized, automated line for the production of tvorog (capacity 2500 l milk/h) comprises essentially tanks for fermenting milk, a unit for the heat-treatment of the coagulum, a curd pump, a curd drainer and cooler, a packaging machine and a process controller. The process involves pumping the coagulum into the heat-treatment unit (heat-exchanger of the tube-in-tube type) where it is heated, held and cooled, before being passed into a drum-type plant for removing the whey.
