A method of determining added lecithin content in instant wholemilk powder

XXI International Dairy Congress Vol 1, Book 2: 260

Added lecithin was estimated from the P content of ashed extracts of instant dried whole milk. Recoveries of lecithin added in the processing of the powder were 90-95% with a Soxhlet extract using petroleum ether, 60% with a CCl4 extract and 70-90% after extraction with 2 successive aliquots of petroleum ether. None of the methods estimated natural phospholipids in the dried milk.
