A modified method for the determination of acid value in ghee

A modified method for the determination of acid value in ghee has been suggested. The method has several advantages over the standard method prescribed by ISI [Indian Standard Institution]. The modified method is highly reproducible, has high recovery of FFA [free fatty acids], has sharp end point, no heating is needed during titration and it requires a small amount of sample and reagent. [FFA released during storage are responsible for development of rancid flavor].
